Recipe Name: Avocado and Cilantro Soup

Ingredients:

Chicken broth   2 cups
Ripe avocado   1
Fresh coriander   2 tbsp
Sour cream   150 ml
Salt
Pepper
 

Method:

  • Heat the chicken broth. Chop the avocado flesh coarsely.
  • Stir the chopped avocado, sour cream and chopped cilantro into the hot chicken broth. Add salt and pepper to taste. Bring the soup to boil and cook it for 1-2 min.
  • Let the soup cool for a while and blend it in a food processor until smooth.
