Method: |
- Peel and slice the apples. Add sugar, cinnamon and 3 tbsp water. Stew till apples are soft.
- Make the short crust pastry. Roll half the dough into a round 1/4" thick.
- Line the pie dish with this pastry. The easiest way to lift to pastry is with rolling pin to make sure the bottom layer of pastry stays firm and crisp during baking, sprinkle with a little flour, corn flour or fine semolina before adding fruit.
- Spread cooked fruit on the pastry and sprinkle cinnamon powder.
- Roll out the second half of pastry a little larger than the size of the pie dish. Damp the edges and place over the top of fruit.
- Press the edges together and cut away surplus pastry (avoid stretching the pastry).
- Brush the top of the pastry with egg white or milk and make a fine slit or a crossing at the centre for any steam to escape.
- Bake in a hot oven (425 degree F) for 20 minutes. Lower the heat to moderate (375 degree F) for further 20 minutes until pastry is done and browned. Sprinkle with sugar if desired.
- Serve.
