Ingredients:

Eggplant cubed   1/2
Brown Sugar   1/2 tbsp
Soy sauce substitute   11/2 tbsp
Ginger   1/2 tbsp
Rice vinegar   1 tbsp
Sesame oil   1/4 tbsp
Garlic minced   1/4 tbsp
 

Method:

  • Peel and cut eggplant into cubes of about 1/2 inch.
  • Spray a pan with non-stick vegetable oil spray.
  • Sauté eggplant until it softens.
  • Mix the remaining ingredients.
  • Stir into the eggplant. Cook and stir until eggplant is soft and evenly coated with sauce
